How Apple, Cinnamon & Pecan Muffins can support your hair health...

12 muffins 40 minutes

12g protein 180 kcal per muffin

 

INGREDIENTS

FOR THE BATTER

300 g greek yoghurt

2 eggs

50 ml maple syrup

2 tsp baking soda a pinch of salt

150g oats

100g flour

50g almond flour

APLLE FILLING

2-3 apples

2 tsp of cinnamon

1 tsp of honey

100 g of pecans (optional)

         DIRECTIONS
  1. Chop apples with the peel into bite-sized pieces and cook in a pan with the honey and cinnamon for a few minutes until fragrant (leave to one side).
  2. Blend eggs, Greek yoghurt, and maple syrup until smooth.
  3. Mix all the dry ingredients in a separate bowl.
  4. Combine your wet and dry mixture, add a bit of milk to adjust the consistency if it feels dry.
  5. Add your cinnamon apples and nuts.
  6. Add the mixture to a muffin tin (12 muffins) and cook in the oven for 25 minutes at 175°C.
  7. Let cool and enjoy.
Can be stored in a sealed bag or container for 2-3 days or freeze for up yo 3 months.
